1 x Onion diced
3 x Garlic cloves, crushed
1 x tbsp ginger, grated
3 x tbsp olive oil
1 x cup Dahl lentils (if can’t find them, Red Lentils)
2 x Tbsp curry powder
1 x Tbsp Hot Paprika (optional)
1 x Tbsp Crushed Chilli flakes from a jar (optional)
1 x Tsp Tumeric
1 1/2 cup Veg stock
1 cup water
1 can coconut milk
2 cups chopped pumpkin


  • Add oil to pan and fry off onion, garlic, ginger.
  • Once softened, add in lentils, curry power and optional powders if using, and pumpkin
  • Poor in the stock and water and bring to the boil
  • Lower to a simmer and add in can of coconut milk
  • let simmer for 30mins to 1 hour (the dish should loose most of its liquid and lentils softened.)

Serve as a main dish with fish or chicken, or just consume on it’s own! SO GOOD!
