Salmon, Polenta and Salsa

Serves 4

Ingredients:

4 x Salmon fillets skin on
1 x red onion, diced
4 x truss tomatoes, seeds removed and diced
1 x cup fresh corriander, chopped
1/2 x cup capers (from a jar)
2 x limes squeezed
1 x tsp palm sugar shaved
4 x tbsp sweet chilli sauce
8 x slices of polenta
1 x tsp salt

Method:

  • Combine onion, tomato, corriander, capers, lime juice and sugar – leave to marinate for 30 minutes
  • Preheat oven to 180 degrees
  • spray polenta slices with olive oil and sprinkle with a bit of salt, pop onto baking tray and roast for 40 minutes
  • 25 minutes into baking the polenta, add in the salmon fillets to the oven and bake for the final 15 minutes
  • to plate up, swirl sweet chilli sauce on the plate, add on polenta, topped with salmon fillet and finish with the salsa on top
