2 x 300g Hoki Fillets (any firm white fish will do – skin removed and pinned)
1 x cup fresh parsley chopped finely
1 x cup grated parmesan
2 x tbsp olive oil
Roasted veggies or steamed veggies to serve
- in a bowl combine parsley, parmesan, olive oil, pinch of salt and a good grind of pepper.
- Mix until mixture starts clumping together (this helps to put on top of the fish
- Scoop the mixture out and form a nice thick layer on top of the chosen fish
- Pop on a baking tray and back for 10 minutes at 180 degrees
I served out fish with roasted veggies but you could choose steamed, rice even noodles and salad!
