This is a really easy, fresh and fast dinner for time poor or healthy conscious people!
2 x Salmon fillets skin on (about 200g each)
2 x tbsp. soy sauce
Greens of choice.
2 x cup kale
1 x zucchini, chopped
Half x head of broccoli in small florets
1 x small eggplant/aubergine
1 tbsp. sesame oil
1 tbsp. honey
1 tbsp. soy sauce
1/2 tsp. fish sauce
- Preheat oven to 200 degrees. Place salmon fillet flesh side down on lined baking tray. Drizzle one tablespoon of soy sauce over each of the fillets and bake for 20 minutes.
- 5 minutes before the fish is ready, heat sesame oil in a hot wok, throw in all your veggies and toss with soy and fish sauce, just before removing from the heat add in honey and toss.
- Serve fish with stir fried veggies for a fresh and fast dinner.
