Chicken with Lentils


Serves 4


4 x small chicken breasts
2 x cup almond meal
1 x cup Cajun spices
1 x egg beaten

1 x cup black lentils washed
1 x cup Greek yogurt
1 x cup chopped coriander
1 x cup chipped mint
2 x tbsp lemon juice
cracked pepper

Lemon wedges to serve


  • boil black lentils in 7 cups of water for 40-50 minutes. Drain and cool
  • combined cooled lentils with yogurt, herbs and lemon juice and set in fridge
  • Whilst mixture is cooling preheat oven to 180 degrees
  • Combine almond meal and Cajun spices
  • coat chicken in beaten egg and then toss and cover with almond meal mixture.
  • place on baking tray and bake for 15-18 minutes depending on size of chicken breast
  • place lentil mixture place and place chicken breast on top
  • serve with cracked pepper and lemon wedge

So fresh and ready for summer!
