This is such a yummy and satisfying winter soup dish! Perfectly topped with crusty buttered bread!
1 x onion diced
2 x tbsp olive oil
2 x Garlic cloves crushed
1 x large head or two small of broccoli
100g of good crumbly blue cheese
2 x cups reduced salt chicken/vegetable stock
2 x cups water
- Heat oil in pan and add in onion and garlic.
- Once fragrant add in the broccoli and stock, bring to the boil and then simmer until the broccoli is tender.
- Crumble in the blue cheese and then blitz with a hand whizzer or blender – add in more water for desired consistency.
- Serve with crusty bread rolls and butter.
